Vinification and aging

Harvest takes place in October, followed by alcoholic fermentation in oak vats. Subsequently, it undergoes aging in untoasted large French oak barrels. The wine is not filtered.

Wine characteristics

The color is ruby with a slight opalescence. On the nose, in its youth, it exhibits typical fruity and floral elements such as dried rose, along with hints of spice and licorice. On the palate, it is substantial, supported by robust yet embracing tannins, concluding with a fresh yet savory finish.

The subsoil

The Parussi, located in the municipality of Castiglione Falletto, faces southwest. The vines were planted in 1982 at an elevation of approximately 220 meters, where they thrive in marly, calcareous soils. The outcome, in keeping with our family's tradition, is nothing short of classic.

The Parussi is part of the Sant’Agata Fossil Typical Marls formation, distinguished by the prevalent presence of sandy components. Its unique composition features soft rock, abundant in plant remnants, shells, and mollusk fragments. The vineyard benefits from a southwest-facing orientation at an altitude of approximately 220 meters.
